3 Point Chicken Alfredo Zoodles


So a few weeks ago my super sweet husband bought me a Vegetti!  Anyone else heard of this nifty little contraption?  Basically what it does is it turns almost any vegetable into noodles so you can get your pasta fix without all the carbs!  This is a great replacement for spaghetti, alfredo, and other italian favorites that leave you feeling guilty.  Since getting this little guy I've been trying out all kinds of recipes and they are all super low in  pointsplus if you are on #weightwatchers like me.  One of the first dishes I made with the Vegetti was Chicken Alfredo Zoodles and it took less than 10 minutes to prepare!  Here's the recipe:

Ingredients:


  • 2 medium zucchini squash (0pp)
  • 2 wedges of The Laughing Cow light swiss cheese (1pp)
  • 2 oz of Tyson Grilled & Ready Chicken breast strips (2pp)
  • 1/2 Tbsp. minced garlic (or to taste) (0pp)
*pp stands for points plus value


Instructions:


  1. Wash your zucchini squash and pat dry.  Using your Veggetti, make a batch of zoodles (zucchini noodles) and set aside. 
  2. Spray a nonstick pan with cooking spray and warm the zoodles over medium heat until they begin to wilt.
  3. Once the noodles have softened, add both wedges of Laughing cow cheese and mix in with zoodles until cheese is completely melted.
  4. Coat a separate pan with cooking spray and add minced garlic over medium heat.  When the garlic begins to heat up, add the 2oz of chicken and cook until browned.  
  5. Transfer your chicken and garlic to the zoodle mixture and stir until it's evenly mixed in.  Enjoy your delicious 3 point dish!
