Apple Pie Logs

A few nights ago I had a hankering for something sweet so I whipped up these little guys to satisfy my craving!  If you are on Weight Watchers like me then you've probably heard of Emily Bites Blog.  She creates all of these super yummy weight watcher friendly recipes and shares them on her blog.  One of my favorite thing of hers to make are pizza logs.  They are essentially just mini pizza eggrolls.  So in honor of her pizza logs I created what I like to call "Apple Pie Logs."


  • 6 eggroll wrappers (I used Nasoya brand, found in the produce section)
  • 2 apples peeled and diced (I used red apples)
  • 1 Tbsp cinnamon
  • 1 Tbsp Stevia or Splenda
  • Juice from an orange (or lemon juice, I just like the flavor of orange juice better)
  1. Preheat the oven to 425 degrees. Lightly mist a large baking sheet with cooking spray and set aside.   Combine apples, cinnamon, stevia and juice in a bowl and mix to coat
  2. Pour some water into a small dish and set aside. On a flat surface, place an egg roll wrapper, corner facing toward you (like a diamond) and spread a few spoonfuls of apple mixture horizontally across the center of the wrapper, leaving ½ inch or so of space on each side. 
  3. Fold the bottom corner of the wrapper (closest to you) up over the apples and give it a 90 degree roll. Fold the side corners in and tuck them as you give the filled section another 90 degree roll. Dip your finger in the dish or reserved water and lightly wet the edges of the remaining top corner of the wrapper. Finish rolling the log over the wet corner so that it adheres. 
  4. Place apple log onto the prepared baking sheet. Repeat with remaining ingredients.  When all of the logs are wrapped and on the baking sheets, mist the tops with cooking spray. 
  5. Bake for 10-14 minutes, flipping once halfway through, until the wrappers are golden brown.
**Makes 6 apple pie logs, 2 points plus per log.**

Kitchen Backsplash

My handyman husband has been hard at work on a new backsplash for our kitchen here at Cashablanca and after weeks of patience and persistence I'm happy to say it is completed!  It makes me smile every time I walk into the kitchen.  Here are a few before and after pictures for your viewing pleasure...

Slacker slacker slacker

Ok guys, I'm a total slacker at this blogging thing but that's ok because I'M BACK!  Not sure for how long but I'm back and wanted to update you on life lately.  So a lot has been going on around the Cash household the past few months and I am now the mother of an 8 month old!!!  How have 8 months gone by already?!?!?!  It seems like just yesterday we brought him home from the hospital and now he's crawling all over the place and pulling up on furniture like a pro.   Since I last posted Levi has been released from the specialist in regards to his head.  That means, NO HELMET FOR LITTLE MAN!  We are overjoyed that the plagiocephaly corrected itself without the intervention of a helmet.  The specialist still wants us to come back monthly to have his head measured to make sure his progress doesn't decline but as of right now he says that he is pleased with the way his head is looking/measuring and doesn't see any need for a cranial band.

In other news I've rejoined Weight Watchers!  I started back on November 12, 2013 and I'm pleased to say I've officially lost all 45 (yes, 45) pounds of baby weight! I'm going to continue on with the program and try to get down to a healthier goal weight so I'd love to use this blog as a way to share with you in my journey and struggle.  I've even started a daily food journal through instagram that you are welcome to check out if you're interested.  This is separate from my personal instagram and is all weight loss related.  That instagram username is wwlaurenlcash.  I'm also going to try and post healthy weight watchers recipes on here along with the old weight watchers posts I made back when I was on the program before (pre-pregnancy).  As embarrassed as I am to show you this, below is a picture to give you an idea of how much weight I've lost:

The picture on the left was taken a few weeks after Levi was born (it says October 2013 but I meant to put November 2013) and the picture on the right is from two weeks ago.  It's been tough but I am not giving up!
