3 Point Chicken Alfredo Zoodles


So a few weeks ago my super sweet husband bought me a Vegetti!  Anyone else heard of this nifty little contraption?  Basically what it does is it turns almost any vegetable into noodles so you can get your pasta fix without all the carbs!  This is a great replacement for spaghetti, alfredo, and other italian favorites that leave you feeling guilty.  Since getting this little guy I've been trying out all kinds of recipes and they are all super low in  pointsplus if you are on #weightwatchers like me.  One of the first dishes I made with the Vegetti was Chicken Alfredo Zoodles and it took less than 10 minutes to prepare!  Here's the recipe:

Ingredients:


  • 2 medium zucchini squash (0pp)
  • 2 wedges of The Laughing Cow light swiss cheese (1pp)
  • 2 oz of Tyson Grilled & Ready Chicken breast strips (2pp)
  • 1/2 Tbsp. minced garlic (or to taste) (0pp)
*pp stands for points plus value


Instructions:


  1. Wash your zucchini squash and pat dry.  Using your Veggetti, make a batch of zoodles (zucchini noodles) and set aside. 
  2. Spray a nonstick pan with cooking spray and warm the zoodles over medium heat until they begin to wilt.
  3. Once the noodles have softened, add both wedges of Laughing cow cheese and mix in with zoodles until cheese is completely melted.
  4. Coat a separate pan with cooking spray and add minced garlic over medium heat.  When the garlic begins to heat up, add the 2oz of chicken and cook until browned.  
  5. Transfer your chicken and garlic to the zoodle mixture and stir until it's evenly mixed in.  Enjoy your delicious 3 point dish!

Apple Pie Logs




A few nights ago I had a hankering for something sweet so I whipped up these little guys to satisfy my craving!  If you are on Weight Watchers like me then you've probably heard of Emily Bites Blog.  She creates all of these super yummy weight watcher friendly recipes and shares them on her blog.  One of my favorite thing of hers to make are pizza logs.  They are essentially just mini pizza eggrolls.  So in honor of her pizza logs I created what I like to call "Apple Pie Logs."

Ingredients:

  • 6 eggroll wrappers (I used Nasoya brand, found in the produce section)
  • 2 apples peeled and diced (I used red apples)
  • 1 Tbsp cinnamon
  • 1 Tbsp Stevia or Splenda
  • Juice from an orange (or lemon juice, I just like the flavor of orange juice better)
Instructions:
  1. Preheat the oven to 425 degrees. Lightly mist a large baking sheet with cooking spray and set aside.   Combine apples, cinnamon, stevia and juice in a bowl and mix to coat
  2. Pour some water into a small dish and set aside. On a flat surface, place an egg roll wrapper, corner facing toward you (like a diamond) and spread a few spoonfuls of apple mixture horizontally across the center of the wrapper, leaving ½ inch or so of space on each side. 
  3. Fold the bottom corner of the wrapper (closest to you) up over the apples and give it a 90 degree roll. Fold the side corners in and tuck them as you give the filled section another 90 degree roll. Dip your finger in the dish or reserved water and lightly wet the edges of the remaining top corner of the wrapper. Finish rolling the log over the wet corner so that it adheres. 
  4. Place apple log onto the prepared baking sheet. Repeat with remaining ingredients.  When all of the logs are wrapped and on the baking sheets, mist the tops with cooking spray. 
  5. Bake for 10-14 minutes, flipping once halfway through, until the wrappers are golden brown.
**Makes 6 apple pie logs, 2 points plus per log.**

Slacker slacker slacker



Ok guys, I'm a total slacker at this blogging thing but that's ok because I'M BACK!  Not sure for how long but I'm back and wanted to update you on life lately.  So a lot has been going on around the Cash household the past few months and I am now the mother of an 8 month old!!!  How have 8 months gone by already?!?!?!  It seems like just yesterday we brought him home from the hospital and now he's crawling all over the place and pulling up on furniture like a pro.   Since I last posted Levi has been released from the specialist in regards to his head.  That means, NO HELMET FOR LITTLE MAN!  We are overjoyed that the plagiocephaly corrected itself without the intervention of a helmet.  The specialist still wants us to come back monthly to have his head measured to make sure his progress doesn't decline but as of right now he says that he is pleased with the way his head is looking/measuring and doesn't see any need for a cranial band.



In other news I've rejoined Weight Watchers!  I started back on November 12, 2013 and I'm pleased to say I've officially lost all 45 (yes, 45) pounds of baby weight! I'm going to continue on with the program and try to get down to a healthier goal weight so I'd love to use this blog as a way to share with you in my journey and struggle.  I've even started a daily food journal through instagram that you are welcome to check out if you're interested.  This is separate from my personal instagram and is all weight loss related.  That instagram username is wwlaurenlcash.  I'm also going to try and post healthy weight watchers recipes on here along with the old weight watchers posts I made back when I was on the program before (pre-pregnancy).  As embarrassed as I am to show you this, below is a picture to give you an idea of how much weight I've lost:


The picture on the left was taken a few weeks after Levi was born (it says October 2013 but I meant to put November 2013) and the picture on the right is from two weeks ago.  It's been tough but I am not giving up!

4 months old

Little man is already 4 months old!   Time is flying by and it seems like he's turned into a big boy overnight.  At his 4 month checkup Levi weighed in at 13 lbs 9 ounces and was 26 inches long.  He's in the15th percentile for weight and 85th for height.  Looks like we've got a long and lean boy on our hands!





While at his checkup appointment our pediatrician noticed that Levi's head has a significant flat spot on the back of it and was concerned it could cause some problems down the road so he referred us to a specialist.  The formal name for his condition is plagiocephaly and could have been brought on by a number of factors (positioning in the womb, attempted vacuum extraction at birth, sleeping on his back, etc) and this could possibly cause health and/or developmental problems for him as he gets bigger (i.e. facial and structural asymmetries, jaw displacement, tmj, vision problems, motor delays such as difficulty rolling over, crawling, etc).  So they ordered us to have a skull series done (x-rays) to check out the severity.  All scans came back fine but the specialist wants to meet with us again in 4 weeks.  He said that as Levi begins to gain better head/neck control some of the issues can work themselves out but if his doesn't improve on it's own they will likely use a helmet to correct the problem.  So our next appointment is on April 7th to see where we need to go from here.  Please be praying for our little man over the next few months and for us as his parents as well. The thought of him in a helmet saddens and overwhelms me but if it's what needs to be done to fix this then we will certainly do it.

Levi's Nursery

A few months back I posted a sneak peak of our little man's nursery makeover (read about that here) so I wanted to post the "after" pictures of how everything turned out.

So...here's the breakdown of where I purchased my nursery decor as well as my design inspiration for the DIY pieces.

Bedding & Rug
I purchased both of these from Target.
 Don't you just love those sweet little ruffles?




Changing Table
I scored the antique dresser at a yard sale for $10 and added the changing table pad on top.
Mirror, lamp & shade were purchased at Target.



Wall Decor
I stole this idea from Dear Lillie's blog.  She has adorable nursery ideas if you are looking for some!  She used her Silhouette machine to make cut outs on scrapbook paper for a little girl's nursery.  Since I have a little boy I decided to go with animal cut outs to make it more masculine.  I used my Cricut to make mine.

For my next project I used modge podge to apply scrapbook paper to four cavases. 
 Once that dried I hot glued the letters to the canvases. 
All of these supplies were purchased at Hobby Lobby. 


And my final little treasure.  My mom purchased this adorable sign from our local art show.  
It's handmade pottery that says "Twinkle Twinkle Little Star, Do you know how loved you are?"


How do you like Levi's nursery?  I'd say I did an ok job for an amateur!

Our Little Man is Here!!!

After a few months of silence here on the blog I'm back and happy to say that I am officially a mommy!  Our little man, Levi Garland Cash, was born on October 28th at 4:47pm via C-section.  After 3 hours of pushing we had some complications (his heart rate kept bottoming out and he had meconium stain) so my doctor thought it was best that we head to the OR to prep for a section.  It was a scary experience but everyone is healthy and doing fine!  He weighed in at a whopping 7 lbs 6 ounces and was 21.5 inches long.  We are totally in love and couldn't have asked for a sweeter, more precious child.  More photos to come!!
